TOMATOES PROVENÇAL
Ingredients
2 large ripe tomatoes
Salt and freshly ground black pepper, to taste
1 small shallot, minced
2 tsp. Mediterranean Greek Seasoning Blend
1 pinch red pepper flakes, optional
1/4 cup fresh parsley, chopped
1/2 cup fresh breadcrumbs
2 Tbsp. Fresh Harvest Garlic Olive Oil, divided
Instructions
Preheat oven to 400°F. Slice tomatoes in half and scoop seeds out. Sprinkle the tomato halves with salt and pepper.
In a medium bowl, combine shallot, Mediterranean Greek Seasoning Blend, red pepper flakes, parsley and breadcrumbs. Stir to blend. Drizzle one tablespoon Fresh Harvest Garlic Olive Oil into the breadcrumb mixture and toss to coat.
Spoon the breadcrumb mixture into the tomatoes, then drizzle with remaining Fresh Harvest Garlic Olive Oil. Bake for 15-18 minutes or until the crumbs are golden and tomatoes are slightly softened, but still holding their shape.
